White Panther pizza from the RNC project
Ingredients for the dough
- 800 g flour
- 20 g Zelene Doline butter
- 1 tsp salt
- 5 g fresh yeast
- 200 ml lukewarm water
- 2 tsp balsamic vinegar
Ingredients for the filling
- 40 g Zelene Doline crème fraîche
- 80 g Zelene Doline Edam cheese
- 40 g parmesan
- 60 g radicchio (or chicory)
- 80 g prosciutto
- 40 g figs
Sift the flour and prepare the yeast mixture by mixing together lukewarm water, salt, balsamic vinegar and yeast. Mix the yeast mixture and butter into the flour until all the ingredients are well combined. Put the dough in the fridge and allow to rest for at least 4 hours. This will give it more aroma and make it more crumbly.
Stretch out the dough, spread with crème fraîche and top with grated Gouda cheese, parmesan and radicchio.
Put the topped base into the oven pre-heated to 200 °C. When the crust turns a golden brown, take the pizza from the oven and top it with slivers of prosciutto and cut fresh figs.
Serving suggestion: the pizza can be served garnished with basil leaves.
