Fruit sponge cake with cottage cheese

Cottage cheese is perfectly complemented by the freshness of fruit. It can be used to create many delicious desserts which can also be pulled off by beginner cooks. Fruit sponge cake with cottage cheese


  • 500 g Linia Zelene Doline pureed cottage cheese
  • 80 g Zelene Doline butter
  • 4 eggs
  • 120 g sugar
  • 150 g semolina
  • 1/2 sachet baking powder
  • organic lemon zest
  • 500 g pitted cherries (or other fresh fruit)


First separate the yolks and whites. Beat the whites until stiff.

Whip the yolks with butter and sugar until creamy. Add the cottage cheese, baking powder, semolina and the finely grated zest of an organic lemon. Stir in the beaten whites and finally add the cherries.

Pour the mixture into a greased tin and bake at 180 °C for 30 minutes until the sponge cake is nicely browned.
